1. Pre-heat grill (medium to high setting).
2. Place aluminium foil over an oven tray.
3. Remove strings (if applicable) from the roast.
4. Remove the rind/crackly from the the roast and place on the foil, scored side up.
5. Grill for 2 to 3 minutes or until the crackle blisters (Note: It is important to closely monitor this process to prevent burning).
6. Remove from the grill and rest for 2 to 3 minutes before serving.
