Pork & Grilled Peach Salad

With Riverview Farms Deli Roast Pork

1 x River View Farms Hot Roast Pork

3 x Peaches

1 (200g) x Mozzarella – torn into pieces

60g Rocket

½ x Red Onion - sliced finely

100g Bread – such as sourdough

2 tbsp x Olive oil



4 tbsp x Olive oil

2 x tbsp Balsamic vinegar

Pinch x Chili flakes

Pinch x Salt

Essential Tools

Chopping board

Chef knives

Grill pan

Baking tray

Mixing bowl

    Tear bread into bite-sized pieces, toss in 1 tbsp olive oil and pinch of salt
    Bake @ 180c for 8-10 minutes until crispy

    Grilled Peaches
    Cut the peaches into 6 wedges each, toss in 1 tbsp oil and grill for 2 minutes per side

    Place all ingredients into a bowl and whisk together or shake in an old jar

  4. 4

    Place grilled peaches, croutons, sliced onion, rocket and mozzarella into a bowl.
    Add ½ the dressing and toss together
    Serve next to sliced pork on serving plate and drizzle remaining dressing on top
