2 fresh banh mi bread rolls
2 heaped tablespoons pate
2 heaped tablespoons mayonnaise
1 Lebanese cucumber, sliced into 2mm strips lengthways
2 spring onions, sliced into strips
1 cup pickled carrot and daikon (you can buy these or make your own)
coriander sprigs to serve
sliced red chilli to serve (Optional)

Step 1. Remove the crackling from the pork and slice into thin strips.

Step 2. Cut the bread rolls horizontally, making sure not to cut all the way through. Spread the pate onto one side of the bread and the mayonnaise onto the other side.

Step 3. Add the spring onion, sliced cucumber and pickles into the roll.

Step 4. Arrange the sliced pork into the cavity then garnish with pieces of reserved crackling and coriander sprigs before serving.
