Asian Papaya Salad

With Riverview Farms Pork Roast

Ingredients

1 x Riverview Farm Pork Roast

Salad

200g Papaya - grated or finely chopped

150g Beansprouts

Handful of mint (torn)

Handful of coriander

50g Peanuts - chopped

2 Spring onions - sliced at an angle

2 Red Chili - thinly sliced

100g Snow Peas - thinly sliced

1 tbsp Lime Juice

1 tsp Sesame Seeds (optional)

Nam Prik Pla

6 tbsp lime juice

6 tbsp fish sauce

1 red chili - very finely chopped

2 cloves garlic - very finely chopped

1" knob ginger - grated

1 heaped tbsp palm sugar

Small handful (stalks and all) of coriander - finely chopped

    For Nam Prik Pla, mix all ingredients together and store in an airtight container in the fridge until ready to use. Can be made up to 1 day in advance

    For Papaya Salad, cut/chop ingredients according to instructions above. Place all ingredients in a bowl and toss gently

    To serve, slice your delicious and crispy Riverview Farms Pork Roast and serve salad on the side. Drizzle the salad and pork with a little nam prik pla. Enjoy!
