Quick & Simple Grilled Peach Salad

 

Last month we talked about mango season.  Well, aside from delicious mangos being in season we have juicy peaches too!  These little “peaches” are, well simply peachy 😉.

For those of you who have served apple with pork you know only too well how the freshness of fruit works perfectly with the saltiness of pork.  Peaches are one fruit that in my opinion make a killer pairing with pork.  The delicious hot roast pork from Riverview Farms, grilled peaches, oversized croutons and some creamy mozzarella is a match made in heaven. Picture yourself whipping up this salad at home before packing it into an esky while your better half swings by your local Coles store and you meet half way with your picnic rug and a nice bottle of white wine in the park.  Don’t tell me you ain’t thinking about how soon you can do it?

Grilling Peaches

The key to grilling peaches is not to use too ripe fruit.  We usually spend ages at the supermarket fondling fruit to find the best one to buy.  These days we are all a little apprehensive on over touching or maybe your partner just has no clue and grabs the first one he/she sees.  Well, the beauty of this salad is under ripe peaches are PERFECT for grilling as the firmness in them means they won’t turn to mush.  If, by some minor miracle (not so much for this recipe) they managed to pick up perfectly ripe peaches

Homemade Croutons

These little babies are easy as – don’t be all fancy and cut up the bread, just tear a few chunks from it, toss them in a little oil, salt and bake them for 8-10 minutes.  They will last for a few days in an airtight container too so why not whip up a Panzanella salad next to pair with your Riverview Farms Hot Roast Pork with Crackle!
