12 mini soft tortillas
1 red apple
¼ white cabbage
½ bunch fresh coriander

1 teaspoon sriracha sauce (or any chilli sauce)

Slice the pork roast into thin pieces, removing the crackling and setting it aside. Place the pork in a bowl and toss with the smokey BBQ sauce.

Finely shred the cabbage, julienne the apple, and pick the coriander leaves.

In a small bowl, combine the mayonnaise and sriracha.

Warm the tortillas in a dry pan or microwave until soft and pliable.

To assemble, spread a spoonful of sriracha mayo onto each tortilla, then top with cabbage, apple, and slices of BBQ pork.

Drizzle with extra sriracha mayo, garnish with coriander leaves, and finish with pieces of crispy crackling. Serve immediately.
