Pork Flatbreads

With Hummus & Salad

1 Riverview Roast Pork, meat & crackling separated & chopped

6 small flatbreads, to serve

lemon cheeks, to serve

sea salt & black pepper

Hummus

400g can chickpeas, drained & rinsed

1 clove garlic, chopped

1 tbs hulled tahini

1 tsp ground cumin, plus extra for dusting

1 tbs olive oil, plus extra for serving

1 tbs lemon juice

2 tbs water

½ tsp sea salt

Salad

½ bunch continental parsley, leaves picked

½ red onion, thinly sliced

6 small radishes, trimmed & quartered

1 tbs lemon juice

½ tsp sea salt

    For hummus, place all ingredients in a food processor and blend until smooth and creamy. Transfer to a bowl.

    For salad, combine all ingredients in a bowl and season with salt and pepper.

    Heat flatbreads according to packet instructions and place onto serving plate. Spread with hummus and top with pork and crackling. Scatter with parsley salad and drizzle with olive oil. Dust with extra ground cumin and serve.
