Italian Pork Rolls with Fennel & Rocket Salad

Ingredients

1 fennel, trimmed & thinly sliced

60g baby rocket

8 ciabatta rolls

1 x Riverview Roast Pork, sliced

parmesan cheese, to serve

Dressings

1 lemon, zested & juiced (about 2 tbs)

1 tsp honey

1 clove garlic, roughly chopped

2 anchovies

2 tsp Dijon mustard

2 tbs extra virgin olive oil

2 tbs grated parmesan cheese

    For the dressing, place everything in a small blender and blitz until smooth and emulsified. Season with salt and pepper and set aside.

    Place fennel and rocket in a large bowl. Add dressing and toss to coat.

    To assemble, divide sliced pork between bread rolls and top with salad. Shave extra parmesan cheese over the salad and serve.
