Ingredients

• 2 slices of Riverview Pork, including crackling

• 1 zucchini, sliced and rolled

• 1 cup diced pumpkin

• ¼ cup crumbled feta

• 6 leaves of cos lettuce

• ¼ cucumber sliced

• 1 spring onion

• Half a tomato cut into wedges

• ¼ of purple onion thinly sliced

Dressing

• Pinch of salt

• ¼ cup olive oil

• 2 tbsp white vinegar

• ½ tsp Dijon mustard

• ½ tsp minced garlic

    In a bowl add all the fresh ingredients positioned in your best artistic landscaping vibes also add the feta either sprinkled or in the one spot for a big hit of feta.

    Mix the dressing ingredients in a jar and give it a good shake.

    Pour over the fresh ingredients and then add the pork slices on top and enjoy.
