How to Cook Quinoa

 

Typically, this time of year we think warm fires, red wine and slow cooked meals to line the stomach and warm up the soul.  Just because the temperatures have dropped it doesn’t mean there isn’t room for some delicious Riverview Farms Hot Roast Pork with Crackle and the occasional healthy salad too!

Pears are tasting great right now and with many varieties to choose from it would be a shame not to match them up and lord knows pork is a big fan of fruits like apple, pear & peaches.

This simple, tasty and quick to make pear & quinoa salad is a little take in the classic Waldorf salad but in our opinion the addition of perfectly cooked pork with crispy crackling is way better than any dainty salad you will pick up!  Plus, the fact that you can get our pork in Coles nationwide throughout the day well, it’s a no brainer!

If like us, you have struggled in the past cooking quinoa then follow these simple steps and you will be right as rain. To start the ratio is 2:1, that is 2 parts water to 1 part quinoa.  Soak the quinoa in the water for approx. 10 minutes and then bring to a boil.  Reduce the heat to a simmer and pop a lid on top. Cook your quinoa for 12-15 minutes (best put a timer on your phone for 10 minutes to see what’s happening) and once cooked remove from the heat, stir gently and allow to cool.

In a hurry? Place the quinoa on a baking tray to cool quicker.  Bonus points – quinoa keeps for up to 7 days in the fridge making it perfect for your 5-day work week lunch!
