1/4 olive oil
2 tablespoons balsamic vinegar
2 tablespoons maple syrup
2 cloves garlic, crushed
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon of salt
1/2 teaspoon cracked pepper
Simply mix all ingredients together and coat veggies right before roasting.
As for the herbed maple balsamic veggies. You can use any vegetables you like! Potatoes, carrots, parsnips, pumpkin, beans, Brussels sprouts or even beetroot. We do recommend par boiling the root veggies for 5 minutes before roasting. And if you’re using beans and Brussels sprouts they can be added later as they require less roasting.
As per instructions cook prepared pork for 40 minutes at 240°C in the provided foil tray.
Place veggies in a baking dish, place pork onto the seasoned vegetables.
Place back into the oven 160°C and roast for 80 minutes or until the pork reaches 70°C internal temperature.
Turn the veggies once or twice so all sides get nice balsamic caramelisation and the maple balsamic juices get absorbed by the pork.
