Riverview Farms Pork Collar Slice or alternatively Pork Belly Slice
Brown sugar / honey / maple syrup
Vegetables of choice (I used potatoes, zucchini, onion and tomatoes)
Butterfly and flatten the pork chop/tenderloin with the back of knife.
Sprinkle some salt and onion powder on the pork.
Place some sliced apple and sprigs of thyme on one side of the pork. Sprinkle some brown sugar on the apple.
Fold the other side over and secure with toothpicks / strings. Coat the stuffed pork with some
Coat some oil on the tray
Pan fry til brown. Do not overcook.
Cut the vegetables and coat with oil. Place them on a baking tray.
Transfer the stuffed pork to the same tray.
Grill for 20 mins or til the vegetables soften or slightly brown.
